Research topic: Non-conventional ingredients for the production of scientifically validated healthy profile foods
The objective of this area is to study the prebiotic action and bioavailability of in vitro and in vivo nutrients of foods made with non-conventional ingredients and with a high content of bioactive compounds. We seek to evaluate the composition and properties of carbohydrates, in both ingredients and products.
