New research article: Effect of chemical, thermal, and enzymatic processing of wheat bran on the solubilization, technological and biological properties of non-starch polysaccharides

This study carried out jointly between the School of Pharmaceutical Sciences of the University of Sao Paulo (USP) and ICYTAC, represents a great example of international collaboration, whereby a graduate student from the USP attended the UNC, and an ICYTAC researcher conducted this research at the USP. We are deeply grateful to Dr. João Paulo Fabi, with whom we have had (and continue to have) the opportunity to develop valuable joint research.
This work opens new perspectives in the field of arabinoxylans from different cereals, which have been proven to be important prebiotics due to their ability to modulate the gut microbiome profile, stimulate the release of SCFA and the proper functioning of the immune system, among other benefits.
